Kitchen cutting boards
Every great meal starts with a quality cutting board.
A cutting board is an essential part of every kitchen. It provides the chopping space for food preparation, or to serve the finished meal. As important as the chef’s knife, the cutting board is arguably the most used kitchen tool in our home. A cutting board often doubles as a protective support or 'hot plate' for food arrangement. Every kitchen should have at least two or more cutting boards, and it is not unusual to have 4 or 5 of them. We recommend that every kitchen has a minimum of two boards, one for fruits, fresh vegetables, bread and food that can be eaten raw. The other one is for cutting raw meat, poultry and fish. This way, your risk of bacterial cross contamination is reduced.

Why use a cutting board?
Because it is the single safest way to keep your food safe from cross contamination (such as bacteria from raw meat getting into your fresh vegetables), and of course protect your counters and knife blades
For that reason you should never use the same surface for different foods. Ideally, use two boards, wash between uses, or at the very least minimum use the reverse side. Also, always start with fresh vegetables, and finish with by preparing the meat. Finally, as recommended by the Journal of Environmental Health, never place any kitchen items on the cutting board such as tin foil and plastic wrap boxes. Only the food and knife, making sure to keep all food pieces on the board so that you do not contaminate the counter or cutting board.
