It is difficult to pick the single best wood for a cutting board because there are so many adequate types. But a wooden board, like any other should not be made from a porous material due to the fact that bacteria can get trapped in between the fibers. Therefore hardwood cutting boards, like the ones on this website made from maple and walnut, are the only type that should be used. There are boards made from very soft wood like pine, but these should be considered a possible health risk.
